SHARPENING STEELS
Sharpening Steels are more of a maintenance tool. Ideal for keeping knives sharp, but not effective when your knives are very dull. There are essentially 2 kinds of Sharpening steels. The traditional metal steel and diamond steels.
A traditional metal steel aligns the edge of a knife and is good for maintaining knives that are in reasonably good shape. You should try and match the brand of your steel to your knife or use a good quality German steel such as F.Dick or Henckels. Sharpening steels should be used frequently and the most important detail that should be observed when using sharpening steel is maintaining a consistent angle.
A diamond steel is essentially a sharpening stick that works just like a stone would . Instead of using metal to realign an edge; a diamond steel uses a diamond coated surface as an abrasive grit to cut a new edge into a knife. They work very well when knives are dull but overuse can take unnecessary metal off your knife and/or change its shape. Diamond steels should not be used daily but are great to have around in between trips to the sharpening shop.
SHARPENING STONES
Sharpening Stones are used to completely restore the edge on a dull knife. Most stones are man made from carbarundrum and some are natural such as the Arkansas stones. There are also diamond stones, japanese water stones, and ceramic whet stones. Always start with the courser grit (lower grit number) and work your way up to a finer (higher grit number) to polish it off.
IMPORTANT : Sharpening stones require skill to use and are not for everyone. If you don ot have experience using sharpening stones, consider sending your knives to us for professional sharpening.
SHARPENING SYSTEMS
Sharpening Systems: Some sharpening systems are designed to be VERY easy to use and others are designed to provide results more accurate than a traditional sharpening stone. If you are looking for respectable sharpening results without a mess and lots of practice, try out a sharpening kit or pull through sharpener.
